  1. In a cast iron skillet, add the extra virgin olive oil over medium heat.
  2. Add sweet potato and cook for 10 minutes. In case you need, add a few tablespoons of water or ¼ cup to help steam the sweet potato.
  3. Add the onion and garlic and cook for another 6-7 minutes, until starting to brown.
  4. Add shrimp and cook for 2-3 minutes, or until they turn pink.
  5. Turn the heat to low and add kale, stirring until wilted. p. Season to taste with salt and pepper.
