Broccoli Cheddar Soup

Ingredients:
- ½ cup cheddar cheese
- 1 cup milk of choice (unsweetened!)
- 1½ cup fresh or frozen cauliflower or broccoli
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon garlic
- ½ cup chicken stock
Directions:
- Steam the broccoli or cauliflower until soft. I typically put the veg in a container with about a tablespoon of water in the microwave for 5 minutes
- Add all ingredients to blender
- Blend until smooth, about 3-4 minutes
Note: This only makes about 1 serving! Double or quadruple for more people.
