Ingredients
- 1 can diced, peeled tomatoes
- 1 can gold corn
- 1 can black beans
- 1 onion (diced)
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 2 teaspoons paprika
- 2 teaspoons cayenne pepper
- 2 teaspoons salt
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- 2 teaspoons cumin
- 6 servings of rice
- Sour cream and cheese to top
All measurements are approximate – experiment with your spices! These can also be thrown into a slow cooker
Directions
- Toss olive oil, onions, and garlic into a sauce pan and sautee until onions are translucent.
- In a large pot (I actually use a wok) combine all ingredients over medium heat (4 or 5 on most stoves), stirring frequently.
- After about ten minutes, turn heat down to 3 and let simmer until everyone is ready to eat!
